CHANGO BARS

A2 brought this recipe home from school. It was at the end of a book they read as a class, and she's been dying to make them. So today we did and they are delish! This is what the heading on the recipe page says:
"These recipes are from a real Mexican-Jewish-American bakery, Los Bagels Bakery & Cafe, in Arcata, California. Kids should ask grown-ups for help with recipes."
We decided it would be great to meet an authentic Mexican-Jewish-American! :) We didn't add the nuts - for 2 reasons: I figured they'd get eaten better without, and we didn't have any, so that made the decision really easy. Six thumbs up from us. Chango Bars 1/2 cup Butter 1/2 cup Margarine 2 cups Brown Sugar 3 Eggs 2 1/3 cups Flour 1 T. baking powder 1 tsp. salt 1 cup Chocolate Chips 1 cup Mixed Nuts Melt butter and margarine. While this is melting, cream brown sugar and eggs, then add melted butter and margarine. Combine flour, baking powder, and salt and stir into sugar mixture. Fold in chocolate chips and nuts. Pour mixture into greased 9 x 13 inch baking pan and bake 45 to 50 minutes at 350 degrees.

BANANA MUFFINS


I found this recipe on http://www.howdoesshe.com/. It's a fun site with fun ideas and recipes. I just mixed some up. Super quick and easy and they are WAY YUMMY!! I've never put nuts in them, but for sure chocolate chips. We all love them! BEST EVER BANANA NUT MUFFINS

  • 4 medium mashed bananas

  • 3 T Vegetable oil

  • 1 large egg

  • 1/3 c. sugar

  • 2 c. Bisquick Baking Mix

  • 1/2 c. chopped nuts (if desired)

  • 1/2 c. chocolate chips (if desired) - but a MUST :)
1. Heat oven to 400. Paper line or grease a 12 muffin tin. 2. Beat bananas, oil, egg and sugar in large bowl until well blended. Stir in baking mix, nuts, and chocolate chips just until baking mix is moistened (batter will be lumpy). Divide batter into muffin tin. 3. Bake about 15 minutes or until golden brown. Cool muffins in pan 5 minutes; remove from pan to wire rack. Serve warm - with milk. (you can also re-warm for about 5 seconds in the microwave and yum!)

FYI- Ripe bananas freeze well. Mash, adding 1 T lemon juice for each cup of banana to prevent them from darkening. For this recipe, freeze in 2 cup quantities.

Welcome

I've been thinking about doing this recipe blog for awhile now, and since I feel like I'll always have 1001 things to be doing at the same time, why not make it 1002? So this could be fun... I'll post some "super yummy" recipes that have been tested by my family, and hopefully will get suggestions and recipes submitted by others so we can all share. The idea is easy, family loving meals, treats, sides, whatever. And hopefully I can figure it out so there will be labels for each post/recipe so it makes it easy to search for what you might be looking for. I think the main goal for me with this is to have a resource for me to come to and remember things I've made before and what is available to make and what everyone likes as I'm figuring out the menus for the week/day/hour. This will also be one way for me to organize my recipes, so yay me! And pictures. I'll try to post pictures as I make things. One thing I have to state right now and it should've been the very first thing I said ... my husband is a MUCH better cook than I am. So alot of these will be what he makes - although alot of what he makes he doesn't use a recipe. But he does like recipes and recipe books and he's just a great chef - along with being a great guy.
