BANANA MUFFINS


I found this recipe on http://www.howdoesshe.com/. It's a fun site with fun ideas and recipes. I just mixed some up. Super quick and easy and they are WAY YUMMY!! I've never put nuts in them, but for sure chocolate chips. We all love them! BEST EVER BANANA NUT MUFFINS

  • 4 medium mashed bananas

  • 3 T Vegetable oil

  • 1 large egg

  • 1/3 c. sugar

  • 2 c. Bisquick Baking Mix

  • 1/2 c. chopped nuts (if desired)

  • 1/2 c. chocolate chips (if desired) - but a MUST :)
1. Heat oven to 400. Paper line or grease a 12 muffin tin. 2. Beat bananas, oil, egg and sugar in large bowl until well blended. Stir in baking mix, nuts, and chocolate chips just until baking mix is moistened (batter will be lumpy). Divide batter into muffin tin. 3. Bake about 15 minutes or until golden brown. Cool muffins in pan 5 minutes; remove from pan to wire rack. Serve warm - with milk. (you can also re-warm for about 5 seconds in the microwave and yum!)
A little tip from howdoesshe.com:

FYI- Ripe bananas freeze well. Mash, adding 1 T lemon juice for each cup of banana to prevent them from darkening. For this recipe, freeze in 2 cup quantities.
